- This delightful salad features finely chopped fresh vegetables, a trademark of middle eastern salads. Topped with feta cheese, cured olives, capers, and fresh parsley it is nearly a meal in itself!

- Ingredients:

- 1 Head Romaine Lettuce (optional)
- 2 Large Tomatoes, chopped
- 2 Scallions, chopped
- 1 Cucumber, peeled, seeded, & chopped
- 5 Radishes, chopped
- 1 Red Bell Pepper, seeded & chopped
- 1 Green Bell Pepper, seeded & chopped
- 1 Small Red Onion, chopped
- 3 oz Feta Cheese, crumbled
- 1/2 Cup Fresh Parsley, chopped
- 6-8 Calmata Olives
- 2 Tbs. Capers (optional)
- Dressing
- Ingredients:

- 1/4 Cup Olive Oil
- Juice of 1 Lemon
- 1 Tbs Wine Vinegar
- 1 Clove Garlic, minced or pressed
- Salt & Pepper to taste
- Pinch Dried Mint
- Directions:

- Rinse the Romaine (if using), tear into bite sized pieces, and place in a salad bowl.
- Combine the remaining vegetables with the dressing and pile on top of the lettuce.
- Sprinkle the Parsley, Feta, Olives and Capers over the salad and serve.
Note: If the lettuce is omitted, the salad will still serve 4-6 as a side dish.
